Corned Beef and Cabbage Recipe

St. Patrick’s Day is fast approaching and what better way to celebrate than with homemade corned beef and cabbage! We have a great recipe for you that is not only easy but also delicious.

The best way to prepare this recipe is by purchasing corned beef that is uncured. Uncured corned beef may not be as easy find as others but it is well worth the find. Uncured means that it doesn’t contain sodium nitrate. Sodium nitrate is a preservative that is found in many processed meats. Unfortunately, cured meats can have various negative impacts on our health.

Cabbage is a cruciferious vegetable that is rich in nutrients and aids in detoxification. Cabbage is full of fiber and contains nutrients such as vitamin C, vitamin K, and folate. Cabbage also contains a compound called glucosinolate, which can help stimulate the production of enzymes in the liver that aid in detoxification. Corned Beef and Cabbage Recipe

Corned Beef and Cabbage:

  • Ingredients:
    • 2.5 pound uncured, corned beef roast
    • 2 small yellow onions
    • 10 medium carrots
    • 10-15 baby medley variety potatoes
    • 2 cups water
    • 1 head of cabbage

    Directions:
    1. Rinse and prepare your onions, carrots and potatoes. Peel and cut carrots in thirds and cut onions into fourths. Peel and cut up potatoes if you’re using russets, or just rinse if you’re using baby reds or a medley variety. Set aside.
    2. Place onions and carrots on the bottom of a large crock pot. Next remove roast from packaging, make sure to remove any seasoning packets that may be inside. Place roast along with juices from package inside the crock pot on top of the onions and carrots. Season with the seasoning packet that it came with if you choose. Add two cups of water. Place potatoes all around the roast. Cover and cook on high for 8 hours.
    3. Take your head of cabbage and rinse. Cut the head into fourth. Open crock pot and place the pieces of cabbage right on top. Cook another 2 hours on high. Remove meat and veggies from crock pot and add to a platter.
